Moulin du bon sens – RobinZwooD
Welcome to RobinZwooD, where we manufacture « Moulins du bon sens, or Common sense mills. » These are granite stone mills inspired by the Astrié brothers. Our goal is to create beautiful, reliable, and efficient mills that produce a flour that preserves all the grain’s nutritional and flavor qualities.
A quality flour must retain all the vitamins, minerals, and enzymes present in the grain’s inner shells. It is also a flour seperated from the bran and that will have intimately mixed the germ, the almond, and its inner shells. We can never thank André and Pierre Astrié enough for promoting these considerations and, above all, designing and sharing these mills that make it all possible.
The particularity of « Astrié-type » mills is that they separate the bran from the germ-almond-protein base. They are then crushed and mixed with the flour. This is done without heating or oxidizing the flour, which could alter its nutritional qualities.
The bran, for its part, is unrolled as much as possible, without being too broken. This prevents it from mixing too much with the flour.
All this is achieved through both the dressing of the millstones and a precise control of the gap between the stones.
The flour is typically type 85 (depending on the sieving) and the extraction rate is around 75 to 80%. And this in a single pass. The flow rate, necessarily low to allow for all this process, is around 25 to 30 kg/hour (of wheat, on our 100cm mills). This produces a great quality silky flour. The flow rate will be slightly lower with old varieties, generally richer and fattyer.
Our job is therefore to build mills with these quality requirements. We are happy to take up many old and modern techniques. We do not hesitate to make certain modifications when they seem appropriate. Being wood lovers, our mills are largely make use of this noble material…
